Beautiful Eyeballs of My Life…

Today was supposed to be a VERY HAPPY, FUN and EXCITING day because it marks the 6th Birthday of my first born niece and mini peanut lover of my life, Ella ClaireANNNNNND…It’s also my sweet Suegro’s birthday, too, which makes June 21st  THE <pause> BOMB!

The day started off fantastic…I was SO jazzed to show Ells this special  CAMEO I made of her, using old video footage I have of her throughout the years…

But, much to my dismay, she didn’t feel like watching it …OR even talking to her Auntie on the phone – SO out of character!  She woke up very sick and so dehydrated that she could barely walk on her own. My heart broke.

And so instead of partying with her friends, she has spent the entire morning, afternoon (and now eve) at the hospital with Mommy, Daddy and Poppa.

…Girlfriend is NOT happy about the arrangements…

The good news is she’s resting and getting fueled back up, IV-style

I know that very soon she’ll be good re-celebrate this damn 6th birthday of hers OUT of the hospital, and so I’ve prepared a freakin’ AWESOME treat in her honor, starring her favorite ingredient…Dun Dun Duuuuuuun…

CHOCOLATE!!!! DUH! Introducing…

Chocolate Birthday Cake Balls, Daily Dubie Style

Holy sh*t, these are amazeeeeeing!

And they’re Vegan + Gluten Free! SNAP!

I thought I bombed them yesterday when I prepared the “cake” part of them using my own rendition of the recipe and this happened…

But, I scooped out the soft centers, instead and just used that! It wasn’t going to be the end of my cakeballs!

After chilling the cake part overnight, I added about 1/4-1/3 cup of (chilled) full-fat coconut milk to the mixture, and used my hands to combine.

Then, I formed the balls…

I stuck these in the freezer for 3 hours (but you only need to for about an hour or so). Last step was to dip them in melted chocolate and add toppings!

I used Ella’s favorite rainbow sprinkles and chopped peanuts.

Here’s how you can make kickass cakeballs of your own that you can feel good about putting in your body!

*Recommendation: Start preparation 1 day in advance!*

RECIPE

*Inspired by OhSheGlows original recipe*

For the Cake

1 cup almond milk

1 tbsp apple cider vinegar

1/2 tbsp pure vanilla extract

1 cup raw sugar

1.5 cups almond flour

1/3 cup unsweetened cocoa powder, sifted

1 tsp baking soda

3/4 tsp fine grain sea salt

For the Cake Balls

1 can full-fat chilled coconut milk (do not use light coconut milk) (I only used 1/2-3/4 cup cream)

1/2 cup Enjoy Life brand semi-sweet chocolate chips

1 tsp coconut oil

Toppings: nuts, chocolate chips, cacao nibs, sprinkles, etc.

DIRECTIONS

First, preheat oven to 350. Lightly grease muffin tin with coconut oil. Mix all ingredients together. Pour batter into pan, bake for 20-25 minutes. Let cool. If yours cave in like mine, just scoop out center part of soft cake. Place in bowl and refrigerate for at least 1 hour or overnight. Then, add coconut milk, and blend into cake with hands. Form balls, and freeze for 1+ hours. Melt chocolate and coconut oil, then dip balls into sauce pan to get evenly coated, and immediately top with topping of choice. Let set, then refrigerate…and Boom! Done! Yum!
