Coconut Hot Chocolate

Wussup Party People?!?

Sh*t’s toasty up in this business!

I mean…I’m practically naked walking around town with bare – dare I say – calves! <gasp!> And wait, there’s more…bare hands and uncovered ears, too! This weather is wild. If the sun were shining, you can bet your bottom dollar I’d be bikini bathing up on my rooftop. Well…maybe that’s pushing it, but doesn’t a little exaggeration always make things more entertaining? <wink wink>.

Alright! Let’s get to the goods, shall we?

I’ve got to prepare for a Pizza Party happening at Casa de Constantiner later, so I’m making this post snappy…tasty, but snappycheeky

Here’s What’s Up:

I looooooooooove hot chocolate. But I’m not talking about that instant powder, crumbly-marshmallow nonsense…I’m talking about real deal, whole milk-style RICH hot cocoa with BIG fluffy marshmallows. Now THAT is the jam!

Although I do love to occasionally indulge in, what I like to call a “classic cup” of hot chocolate, I generally don’t eat much dairy, so I wanted to come up with an alternative that was, well “without the moo,” if you will. And, as much as I LOVE almond milk with a passion, it’s not quite rich enough (for my taste buds) to use in the form of hot cocoa. And so I used…

Coconut Milk!

Again…not lowfat, only because it’s not as thick, creamy and rich as the full enchilada. I suppose you could use light, but a little bit always goes a long when you keep it real. Ya hear me?!

Che che check it out, Yo!

1/2 Cup Full Fat Coconut Milk

1/2 Cup Water

2 T Unsweetened cocoa powder

1 T Agave

1/2 tsp Vanilla

Gluten-Free Marshmallows

Combine all ingredients (minus the marshmallows) into a small saucepan, then turn heat to low. Allow ingredients to melt down for  a minute or two before whisking. Let everything slowly heat to a mild – almost boil, then give it another good whisk. Serve immediately and top with marshmallows!

MMmMMmmmm! I found that I could only drink half of this because it was so rich…but catch me on another night and I’m sure I’ll have no problem guzzling the whole thing. But anyway, it proves my point that if you use high quality real, whole ingredients that nourish your body, you will be satisfied on smaller portions.

Word to your Mama…I’m out, Suckas!
