<Long Sigh>

Today is a *special treat* here in New York City. We (finally) have a beautiful cool, sunny Fall day on our hands and I am in heaven! Check it:

That's straight Gangsta Sauce right there! Woop!

I've got all the windows in the apartment open, fresh air is coming through (AC is OFF, thank you mary, jesus & joseph) and the fact that I actually need to wear a light jacket has me lit up inside.

For those new to the Daily Dubie family, Fall is my favorite season! For loads of reasons, ranging from the holiday celebrations, to the food - pumpkins, squash, warm chilis, hearty soups, juicy roasts - to the flavors - cinnamon spice, warm vanilla, nutmeg - to the sheer joy, excitement, and fun spent with family and friends, that epitomizes these next four months.  Oh! And I can't forget to mention that it's also my fave because I happened to marry the LOVE OF MY LIFE in the Fall! (November 6th in case you're wondering- kind words & gifts are welcome and appreciated) - OOoh snap! I'm kidding of course.

And now...before I bid you farewell for the day, check out this Paleolithic, sweet, creamy and delicious Breakfast recipe I took a stab at this morning.

*Note: I was inspired to make this recipe when I was perusing my fellow blogger friend, Clare Brady's blog, Fitting It All In. So thank you for the yummy idea, Clare! smiley

Here is my take on...

"Oatless" Oatmeal

INGREDIENTS:

2 Egg Whites

1 T Ground Flaxseed

1/4 Cup Almond Milk (OMilk if you can!) DIVIDED (use 1/4 cup beforehand, and 1/4 after it's made to add on top)

1/4 tsp Vanilla Extract

1/4 tsp Cinnamon (more if you it extra spicy!)

1/2 Banana

Toppings

1.5 T Raw Almond Butter

2 T Raw Cacao Nibs

1/4 Cup Almond Milk

DIRECTIONS:

1). Blend all ingredients together (except for toppings).

2). Pour mixture into sauce pan - turn stove on med-high heat. Stir constantly with spatula for about 3 minutes, or until mixture is fluffy.

3). Pour into bowl, add toppings & voila!

Verdict:

A+!

I loved this dish! It was almost like a cream-of-wheat-ish texture, but fluffier. It was filling and delicious! I also love it because the flavor combos are endless! I'm going to have so much fun with this! Next time, I'll do a pumpkin edition! This is also a great, flat-belly friendly recipe to make, because it's grain-free, gluten free, high in protein, and low in carbohydrates.

Gangsta!

Aight...I'm out for today Lovies! It's time to deliver put my badass health coaching skills to the test!
